Chicken Tortilla soup.
Ingredients:
2 tablespoons
vegetable oil.
2 chicken breasts,
diced.
2 cloves garlic,
diced.
1 jalapeño chili,
diced.
½ cup diced onion.
5½ cups chicken broth.
2 14.5-ounce cans crushed
tomatoes.
1 teaspoon chili
powder.
1 teaspoon cumin.
1 teaspoon oregano.
½ teaspoon salt.
1 teaspoon garlic
powder.
1½ cup white hominy.
1 14.5-ounce can
black
Beans.
How To Prepare :
1-Heat the oil in a
large pot over
high heat. Add the
chicken, garlic,
jalapeño, and onion.
Stir and cook
the mixture for about
10 minutes.
2-Stir in the chicken
broth,
tomatoes, and 1½ cups
water.
Add the chili powder,
cumin,
oregano, salt, and
garlic powder.
Stir well. Bring the
mixture to a
boil over high heat.
Turn the heat
down to medium-high.
Simmer for
50 minutes, stirring
occasionally.
3-Add the hominy,
beans, lime juice,
and cilantro to the
pot. Simmer for
10 minutes, stirring
occasionally.
4-Serve hot in bowls.
Sprinkle green
onions, cheese,
avocado, and
tortilla chips on
top.
