Cheesy potato & egg
bake.
Ingredients:
non-stick cooking
spray.
3½ cups grated
potatoes.
1 pound breakfast sausage,
chopped.
½ cup chopped onion.
12 ounces cheddar cheese,
grated.
½ cup diced green pepper.
1 16-ounce container.
small curd cottage cheese.
8 large eggs.
1 teaspoon salt.
½ teaspoon black pepper.
¼ cup butter
How To Prepare :
1-Preheat the oven to
375 degrees.
Grease the baking
dish with
cooking spray. Wrap
the potatoes
in paper towels.
Squeeze out any
water.
2-Put the sausage and
onion in a
saucepan. Cook over
mediumhigh
heat about 10 minutes
until
browned. Drain the
grease. Let the
mixture cool.
3-Crumble the sausage mixture into
a medium mixing bowl.
4-Add the cheddar
cheese, green
pepper, cottage
cheese, eggs, salt,
and black pepper.
Stir well.
5-In a large mixing
bowl, stir
together the potatoes
and butter.
Press the potato
mixture into the
bottom of the baking
dish.
6-Pour the sausage
mixture over the
potato mixture.
7-Bake 1 hour. Remove
it from the
oven. Let it cool 10
minutes.
